The premier said on May 1 "this afternoon we lost our dad, John Minns".
"To the end, he was surrounded by love and family, with his wife and children by his side," he said.
John Minns was a former school teacher and principal. He and his wife Cara were proud supporters of their son and his political career.
Mr Minns' sudden illness was first reported on April 29 when the premier cancelled a scheduled radio interview with 2GB presenter Ben Fordham.
The 72-year-old was rushed to Sydney's St George Hospital and placed in an induced coma.
The premier said the family had been "very moved by all the messages of support over the last few days".
"We thank the NSW paramedics and all the nurses and doctors at St George Hospital, who gave our dad great care this week," he said.
